Mary K. Nichols, nee Service has passed away peacefully in her sleep on August 11, 2023 in Clayton, NC.   She was THE Velvet Assassin. So sweet and kind in her speech, manner and actions that when she indicated that you should go to hell; you were happy and excited to go!  She always said that she was a giant trapped in a tiny body.

Mary was a (mostly) terrible cook because pork chops should not be likened to hockey pucks and rice is supposed to be soft not crunchy. Her only requested recipes, her fantastic chili and a fruit dip.

Chili recipe:

3 cans Campbell’s tomato soup

1 lb. ground beef (cooked & crumbled) drain if desired

2 cans of Joan of Arc kidney beans light red

McCormick Chilli powder (add to personal taste. Must be McCormick’s)

Course ground black powder (add to personal taste)

Crushed red peppers

Cook until kidney beans split. Serve with Doritos or bread.

(Name brands matter in this recipe. Enjoy!)

Fruit Dip recipe:

Half a tub of Cool Whip

Tablespoon of honey

Whip together until blended.

Besides cooking, Mary enjoyed gardening, politics, and spending time with her family. Her accomplishments include working with Salvation Army managing the Golden Diners, numerous awards from JP Morgan Chase, being a loving wife, and a great mom.

Mary is survived by her partner in crime, Pepper the cat, her two daughters, Wanda & Tina, three grandchildren, and her youngest brother, Jeff (Cheryl) Service.

She is preceded in death by her husband, the love of her life, Tim Nichols. He kept her happy as her personal chef, fellow wild west explorer and loving dance partner.

Also preceded in death by her parents John and Anna, brother John and sister Carol.

To her Checkmate restaurant family & friends she says, “Never Call Retreat!”

To everyone, her laugh was so contagious that we laughed with her without even knowing the reason or the punchline. Laughing until you cried and your stomach ached while gasping in another breath. Mary’s laugh was recognized everywhere! So, remember her laughter, remember your joy and she will be with us forever.

Mary will be laid to rest next to her loving husband, Tim, on August 16 at 11:00 A.M. at Bluff City Cemetery at 945 Bluff City Blvd in Elgin.
